When we set out to build The Evolution, we didn’t want to just make another smoker. We wanted to solve the real frustrations that pitmasters, backyard BBQ warriors, and competition teams deal with every day. Hot spots and cold zones are the downfall of so many smokers. With The Evolution, we solved this by creating our Super Collector and Scoop system. These features work together to spread heat evenly across the cooking chamber, giving you consistent temperatures no matter where your meat sits. You won’t have to shuffle briskets around halfway through a cook to keep them from burning or drying out.

2.    The semi-insulated firebox makes fire management easier
Managing your fire shouldn’t feel like a constant battle. The Evolution’s semi-insulated firebox helps retain heat better than traditional designs, making it easier to hold steady temperatures and burn fuel more efficiently. You’ll spend less time fussing with your fire and more time focusing on the cook. Whether you're running an all-day brisket smoke or a quick rib cook, your fire stays consistent without constant attention.

3.    The secondary smokestack gives you better temperature control
Most offset smokers only give you one way for heat and smoke to exit the cook chamber. We added a second smokestack to give you more control over how your smoker drafts. This helps fine-tune your airflow and adjust your cooking temperatures with more precision. Whether you’re running the smoker wide open or dialing it back for a low-and-slow cook, you’ll have more control over your fire and your results. It also is the only backyard offset we know of with a secondary smokestack that allows you to easily cold smoke or use Bar-A’s “cold smoke” method. With this method you simply close the big stack, open the small stack, fill your firebox with wood splits and let the Evolution run for hours without having to tend to it. You can actually get some sleep and not have to stay up all night watching your fire.

4.    Built to handle serious cooks
The Evolution isn’t just for backyard weekend warriors (though it’s great for them too). This smoker has the capacity and durability for serious pitmasters and competition teams. You can load it up with up to 12 briskets or 14 racks of ribs without sacrificing performance. It’s built from heavy-duty steel right here in the USA, and it’s designed to last for generations.
